SUSTAINABLE TRADITIONS OF GRASS-FED BEEF

Thomas Cuisine and Central Montana Beef are joining forces to revolutionize the food system by bringing awareness and access to sustainable food options. By offering grass-fed beef, we are promoting a sustainable alternative to the traditional feedlot-raised beef, which is known for its negative environmental impacts. This partnership is not just about providing a healthier option for consumers but also about educating them on the benefits of sustainable food and encouraging them to make more environmentally conscious choices through food. By working together, Thomas Cuisine and Central Montana Beef are making a positive impact on the food system while raising awareness about the importance of sustainability in the food industry.

Central Montana Beef is backed by nine generations of sheep and cattle ranchers who prioritize the health of the land as well as every head of cattle within their herds. Ranchers of this area encourage the natural grasses of Montana because it provides renewable, high-quality fuel for cattle to grow and develop healthfully without the need for unnatural supplementation. These unique grasslands thrive when grazed in a rotational manner, meaning a section of land is partitioned and once the grass is eaten down to a certain length by the cattle, the herd is moved to a new section of mature grass to allow the previous section to rest and regenerate. By rotating sections, the soil and natural biome of the grass is encouraged to grow, providing for continual nutrients and large areas in which cattle can healthfully grow.

GRASS-FED BEEF DELIVERS ON OUR REAL FOOD MISSION

A large inspiration for sourcing grass-fed beef for our dining programs stems from the responsibility we have in upholding our REAL Food Mission for the 22 million meals we serve per year. The nutrients of grass-fed beef far surpass the nutrients of feed-lot beef. Grass-fed cattle receive a variety of complex nutrients in every tonnage of grass or hay consumed; in comparison, feedlots experience a lesser level of available nutrients due to stress, competition, environment, and the quality and type of feed given to the cattle. The ability to offer beef that comes from a natural outdoor environment with plenty of protein-rich grass, water, fresh air, and space for each herd member results in a superior product for those we serve by providing essential bioavailable nutrients that our bodies require for daily healing and revitalization.
