In the recent podcast episode of FM on Demand, Shane Lynch, Vice President of Culinary Excellence for Thomas Cuisine, joins podcast host Tara Fitzpatrick to share an exclusive on Thomas Cuisine’s REAL food commitment.
“Our REAL food approach is quite simple,” explains Shane. “It stands for ‘Robust Flavors, Exceptional Ingredients, Avoiding Additives, and Loaded with Nutrients.’ But the basic definition is this scratch-cooking using fresh ingredients. As a food management organization, we believe we have a responsibility to improve the lives of others through better food.”
When asked about the company’s ability to focus on real foods after the global pandemic and the state of the world’s supply chain, Shane dove into the company’s partnerships with local farms.
He shares, “I believe the pandemic actually reinvigorated people’s focus on health and wellness. There has been a lot of disruption in the supply chain, but the good news is we actually use fresh ingredients, and we source straight from the farmers.”
In the podcast episode, Shane also covers the Thomas Cuisine mission, as well as the team that helps facilitate the real food vision. Shane himself joined the Thomas Cuisine team as an Executive Chef after graduating from the Culinary Institute of America. He then chased his passion for biodynamic and organic farming around the world, apprenticing in New Zealand and studying regional cuisine in Singapore, Malaysia, Thailand, and Indonesia. Shane’s skills have lent success in opening and operating renowned restaurants abroad, as well as managing flagship accounts across the nation.
