Thomas Cuisine is pleased to share an exclusive Food Management interview about our REAL Food commitment with Shane Lynch, Vice President of Culinary Excellence. After graduating from the Culinary Institute of America, Shane started his career with us as an Executive Chef serving our clients in the Northwest. He then chased his passion for biodynamic and organic farming around the world, apprenticing in New Zealand and studying regional cuisine in Singapore, Malaysia, Thailand, and Indonesia. Shane’s skills have lent success in opening and operating renowned restaurants abroad as well as managed flagship accounts across the nation.
