New York-Style Deli

True to its name - this station features the finest meats, cheeses and hand-sliced fresh breads for tailor-made sandwiches. Unique spreads such as Hummus, Pesto and Cranberry Aioli give these sandwiches an unforgettable flavor. Whole grain bread offerings and warm grilled Panini Tortilla wraps are regularly featured. Guests may order a sandwich of their own design, or choose from one of our signature sandwiches.

Traditional Grill Favorites & More

Offering traditional grill favorites such as Reuben Sandwiches, Philly Cheese Steak and Burgers prepared in trans-fat free oil. The menu staples of this station are made-when-ordered using 100% lean ground beef Hamburger and marinated Grilled White Meat Chicken with freshly prepared toppings. It’s hard to resist one of our gourmet burgers like the Bleu Cheese and Bacon or try it on the lighter side with a Grilled Portobello Mushroom instead of the burger. Our Crispy Chicken Sandwich on Whole Wheat 7 Grain Bread with Honey Mustard Spread, served with Sweet Potato fries will have your customers talking! Vegetarians appreciate the Garden-Burgers, Marinated Grilled Vegetable Skewers and House-made Ranch Chips.

Items like Bourbon Street Chicken over Dirty Rice or Teriyaki Stir Fried Vegetables with Canton Noodles will keep guests coming back. Unique offerings such as Japanese Sushi, Omelets Made-to Order or even Caramel Bananas Foster draws an audience of curious “how is that made?” spectators, eager to have the Chef create the dish just for them! Exhibition style cooking produces irresistible aromas and visual intrigue that entices guests and creates ongoing interest.

This is a Chef attended, built-to-order salad station featuring the freshest ingredients and house-made dressings for creating a true gourmet salad experience. Our signature salads include Grilled Chicken, Spice Seared Salmon or Shrimp Caesar with house-made Lemon Pepper Croutons, or the Capresse Mozzarella, Beefsteak Tomato and Basil Salad with a Balsamic, Smoked Salt and Extra Virgin Olive Oil drizzle. This station will bring back guests looking for exciting and healthfully prepared salads on a regular basis.

Classic Made-from-Scratch Entrées & Comfort Foods

Entrees that speak to those of us who crave scratch-made, recipes that rival even the best local restaurants. It features ethnic favorites such as, Alfredo Vegetable Lasagna with Garlic Bread or Green Chili Verde, Chicken and Cheese Enchiladas. Other favorites include Roasted Rosemary Chicken with New Potatoes and Lemon Asparagus, or perfectly cooked Grilled Maple Leaf Salmon with Basmati Rice and Almond Green Beans.

Slow-Cooked Meats Carved to Order

Our Carvery station features a variety of slow-cooked, flavorful meat selections that are hand-carved when ordered. Our menus include traditional Sage Roasted Turkey with Cranberry Sauce, Honey Mustard Crumb Salmon, Classic Cider Glazed Roast Porkloin, Pot Roast or Slow-Braised Beef Short Ribs. Rich, sumptuous sauces and gravies coat tender, succulent, slow-fired roasts made in our kitchens as if it were from your own.

Basil’s Uppercrust

A Taste of Italian Cuisine

Our authentic “Basil’s Uppercrust” program features traditional Italian baked cuisine made with a variety of premium ingredients, from pepperoni to buffalo sausage. Served by-the-slice or as your own personal-sized Italian paradise. Try our daily special featuring an additional taste of Italy, such as 3 Cheese Spinach Calzone with Primavera Sauce, Tuscan Stromboli with Pesto Dip, or crisp Personal Pizzas that are sure to entice patrons to return again and again.

Metropolitan Wraps

Wrapped with International Flair

One of our newest stations will feature “made–to–order” wraps infused with flavors from around the world. A healthy and delicious entrée - often with lower calorie content and dynamic flavors. A few of our selections include the Asian Persuasion rolled with ginger crusted beef and crisp cucumbers and green cabbage or the Tandoori Twist, featuring slow roasted lamb spiced with garam masala, diced red onions and a cool tzatziki yogurt sauce. All offerings can be made gluten free and created to comply with Spotlite (ADA) health requirements.

Our Fusions Station (often self-serve) focuses on international flavors - authentic ethnic offerings that provide as much education as they do epicurean experience. Get out your passport to planet food and dine in Eastern Germany or the Czech Republic – be mesmerized by Mongolian cuisine or plunge your fork into mouth watering African delicacies. The station décor and attention to detail helps bring the ‘feel’ of the featured cuisine to life - making this a true eating escape!

Steam ‘n Tureen

This station really speaks to the culinary abilities of the Chefs in our kitchens. Soups built from time honored recipes with ingredients that produce superbly flavored broths and stocks. Favorites include Chicken Soup, Clam Chowder, Coconut Shrimp with Spinach and our Hearty Vegetarian or authentic savory Beef Chili – served piping hot.

Salad Bar

Look for items like Edamame, Spring Mix lettuces, Green Garbanzo Beans, diced proteins, pasta salads, specialty produce, house-made Croutons as well as sustainable seasonal fruits and vegetables, where possible. The Salad Bar features a large variety of fresh ingredients, including house-made dressings.

Our “Spotlite” concept offers a flavorful, light cuisine choice. A full meal featuring less than 600 calories, with less than 10% of the calories coming from saturated fat and under 30% of the calories from total fat – prepared from the freshest ingredients. This is where flavor meets fitness!

This concept provides easy access to grab-n-go items. It is especially attractive to employees with limited mealtimes and those on the go. This is an environmentally friendly, healthy, splendidly tasty, calorie free, and economic way to offer hydration. This station is full of natural flavors that permeate the water. Guests taste water like that served at a spa or fine restaurant at a fraction of the cost. Try Cooling Cumber, Citrus Cooler or Ginger Raspberry. It is a refreshing flavor experience – in place of sugar-based beverages.
